Salak sharpness meets serpent heat
Bali Venom is the second sauce in our Fruit Series — a tart, tannic chili sauce built on salak (snakefruit), one of Bali's most distinctive tropical fruits. Where Dragon Breath is sweet and creeping, Bali Venom is sharp and immediate. The heat strikes fast, the tartness lingers, and the complexity unfolds with each bite.
Salak has a sharp, acidic profile with apple-like crunch and a tannic finish. Its scaly skin resembles snakeskin — hence the name "snakefruit."
Unlike Dragon Breath, this sauce hits fast. Sharp chili heat arrives upfront, balanced by salak's natural tartness. Not subtle — aggressive.
Salak is native to Bali and Java. We source ours from small farms in Karangasem. You won't find this fruit-chili pairing anywhere else.
No sugar added. The sauce relies on salak's tart acidity, chili heat, and a hint of garlic to build a layered, savory profile.

Salak is a small, brown fruit covered in scaly skin that peels away to reveal pale, segmented flesh. It tastes like a cross between apple, pineapple, and citrus — sweet, tart, and slightly astringent. The texture is crisp and dry, not juicy. It's a staple fruit in Bali and Java, but virtually unknown outside Southeast Asia. Using it in a chili sauce is unconventional, which is exactly why we're doing it.
